Beer Pretzel with Beer Cheese Dip

Ingredients:

• 1 tablespoon chives minced

• 1/2 red onion thinly sliced

• Salt

• Pepper

• 2 tablespoon beer we used Oktoberfest style larger

• 1/2 yellow onion

• 1/2 pack, cream cheese

• 1/2 tablespoon paprika

• 4.5 ounces of brie cheese

• 1 tablespoon caraway seeds

• 3.5 ounces of limburger cheese or some other strong flavored cheese like Talegio

Pretzels

• Corse sea salt

• 1/4 cup baking soda

• 1 egg beaten

• 1 pack premade pizza dough

• 6 tablespoon beer we use Oktoberfest style larger

• 5 cups of water

•  3/4 cup flour

Directions:

  1. Cut rind off the soft cheese while they are still chilled, then cut it into cubes.
  2. Blend the cheese with fork, then add the diced onion, cream cheese, beer, and spices and mix it again. When well incorporated, stir in the salt and pepper to taste, Chill.
  3. Take the pizza dough out and roll it into a ball. In a large bowl, add flour and beer to the dough and mix it with your hands until its firm and not sticky. Add more flour if needed.
  4. Rip off piece of the dough and roll it into a 6 inches long log.
  5. To form a pretzel, pull the ends of the log to the top of circle. Twist the end around each other once and put them down to reach the bottom of the circle. Then transfer it to a baking sheet.
  6. Repeat it until all dough is formed into 12 pieces of pretzels of about 3 inches diameter.
  7. Chill the pretzels in the fridge for at least 20 minutes.
  8. Pre heat the oven to 425 degrees F.
  9. Bring the 5 cups of water to boil in a medium pot. Add baking soda into the water and immediately add the pretzels.
  10. Boil for at least 20 to 30 seconds, then take it out and place it on a baking sheet lined with parchment papaer.
  11. Brush egg wash into the top of each pretzels then top it with corse salt.
  12. Bake it for at least 15 to 20 minutes or until it is deep brown.
  13. Before you serve the beer cheese, garnish it with sliced red onion, Cheese mixture can be use as dip or spread.
